Breakfast Quesadilla

This Breakfast Quesadilla is a super quick recipe the whole family will enjoy. Made with bacon, egg, caramelized oinions, avocado and two types of cheese.

Breakfast Quesadilla

Cook Time 15 minutes | 1 Serving

Ingredients

1 medium to large tortilla (flour or gluten-free)
1 scrambled egg
1 piece of crispy bacon
¼ cup caramelized onion*
¼ avocado, sliced
¼ cup shredded and mixed monterey jack and sharp cheddar cheese

More topping ideas:
Baby spinach, pepper jack cheese, arugula, sautéed mushrooms, breakfast sausage, sautéed sweet peppers, guacamole, salsa

 

How to Make It

Cook all of your toppings as needed. Make the scrambled eggs, bacon and caramelized onion if using them. You can customize these quesadillas to your favorite breakfast toppings, so prep the toppings you wish to use.

To assemble, start in the bottom middle of the tortilla and cut straight up until your knife reaches the center. Add the eggs and bacon to the bottom right quadrant of the tortilla. Add the onion to the top right, the avocado to the top and the cheese in the bottom left. If using other ingredients, arrange them in your desired order, as long as one ingredient is in each quadrant.

Carefully fold the bottom right corner with the egg and bacon up and on top of the onion. Fold both of those to the left over the avocado then down on top of the cheese to create a triangle.

Heat the front of the griddle over medium-high heat and place the quesadilla directly on the grill pan. Cook on one side for 2-3 minutes until it’s warmed and you can see golden brown grill marks on the bottom. Flip it over and cook for another 2-3 minutes until the cheese is melted and it’s warmed all the way through.

Cooks Notes

If you don’t have a griddle, use a heavy bottomed skillet on over medium-high heat.

*To caramelize the onion: slice half a yellow onion thinly and cook with 1 tablespoon of olive oil or coconut oil on medium-low heat for 20 minutes. If you don’t have time to do this, you can opt for another topping like spinach or peppers!
